Holistic Health: The best diet you aren’t eating? High-protein vegan “Eco-Atkins”

As Marion Nestle reports on Food Politics, US News just released its rankings on the healthiest diets.  One of the most effective (and probably most challenging) is the “Eco-Atkins,” a high-protein vegan eating style.  It’s hard to find recipes to fit researcher David Jenkins’s criteria, but you can find some by Michelle Dudash, RD, including southwestern breakfast hash (left), warm edamame salad, and all-purpose seitan, here.
